Chocolate Avalanche
The obvious one, and the reason it is obvious is that it works.
Twenty-eight tubs in the freezer
Dairy-free · a sorbet, not an ice cream
£6.50 per 500ml tub
Thirty-one tubs in the freezer
Hallam Lane strawberries, lemon juice and sugar. That is the entire recipe, which is why it tastes like the fruit and not like pink. It is the one flavour we have never taken off the board since 2011.
What turns up
All of it on a Thursday, all of it in one room behind the sea wall.
Drag the yard sideways to follow it along — all three are written out underneath either way.
Thursday, 6am
Twelve kilos of Hallam Lane strawberries, hulled by hand because a machine bruises them. Nothing is cooked — cooking strawberries makes jam, and this is not jam.
Thursday, 9am
Lemon and sugar go in at the start, and that is the lot. It churns until it holds a ribbon, which is about forty minutes and entirely a matter of somebody watching it.
Thursday, noon
Into 500ml tubs while it is still soft, lids on, dated, straight to the blast freezer. The date on your lid is the Thursday it was made.

Flump’s opinion, and he has had a lot of time to form one.
The obvious one, and the reason it is obvious is that it works.
Twenty-eight tubs in the freezer
Also dairy-free, so the whole box can be if it needs to be.
Thirty tubs in the freezer
Two sorbets in one box is not too many sorbets. We checked.
Fourteen tubs in the freezer

There is no milk, cream, butter or egg in the recipe — it is fruit, water, sugar and lemon. It is churned on the same machine as the dairy flavours, first thing on a Thursday after the machine has been stripped and washed. That is as far as we can honestly go.
Because twelve kilos of British strawberries in June cost about what the cream does, and somebody still has to hull them. In February it costs more, which is why this one disappears for three weeks in late winter rather than being made with imported fruit.
It is 24cm across and 11cm deep, so it goes in a drawer on its side but not standing up in most under-counter freezers. If yours is small, three 500ml tubs hold the same amount and stack better.
For collection, yes, any number. For van delivery one tub costs £6.50 plus £4.80 to bring it, which we think is daft — but if that is what you want, that is what you get, and nobody here will argue.
Same tub, same batch. The hatch one is served a few degrees softer because it sits in a scooping cabinet, which does make it taste sweeter. Leave your tub on the side for five minutes and you will get the same thing.
They do not usually see Sunday. Put a tub by and collect it whenever suits.
